It was 2:00 am and I was up again! Who’s with me? Feel free to Facebook me from 2:00-4:00 am … I’m usually up! And I thought a little snack was in order. After standing with the fridge door open for five minutes and seeing all the things that weren’t trippin’ my trigger, I was suddenly inspired to make the ultimate grilled cheese sandwich. And, my dears, it was awesome. I can’t wait for you to try this at home … and the beauty is that you can vary the ingredients almost endlessly!
So have some cheesy fun! You don’t have to wait until 2:00 am, either … these would be good for lunch, dinner or a snack. Heck, I’d eat one for breakfast!

Ultimate Grilled Cheese Sammies!
This is for one sandwich – multiply as needed
- 2 slices of your favorite sturdy bread (such as a nice whole wheat or multi-grain)
- Italian Garlic Butter Seasoning, prepared with butter as directed
- Parmesan Cheese
- Cheese (I used fresh mozzarella)
- Roasted Garlic Infused Oil
- 2 Tbsp. walnuts
- A handful of fresh spinach and/or arugula
- 2 Tbsp. diced bell pepper
- 2 Tbsp. diced onion (or a sprinkle of green onion)
Butter each slice of bread on one side; sprinkle the buttered side with Parmesan cheese (pat the cheese in with a spatula or your hands). Heat a little Roasted Garlic Infused Oil in a non-stick skillet. Add the walnuts, spinach, bell pepper and diced onion to the hot oil. Saute until the onions are translucent and the spinach is wilted. Transfer the sautéed mixture to the unbuttered side of one piece of bread; top with sliced cheese. Place the other piece of bread on top, buttered side out. Place the sandwich in the skillet and brown to your liking. Flip to brown the other side. Serve immediately.

Testing Notes:
- I cannot begin to tell you how delightful a grilled cheese sandwich is when you butter it with garlic butter and then sprinkle on Parmesan cheese. Oh my stars!
- This truly was a combination of ingredients that just happened to be in my fridge, so go wild! Add whatever sounds good or whatever you have on hand. Sautéing the onions and peppers along with any other veggies is wonderful.
- Using stretchy, ooey-gooey fresh mozzaralla is a most excellent cheese choice!
- One other night, I made a midnight snack for my husband and me using sautéed ham, onions, peppers, spinach, mushrooms and Garlic Garlic™. We grilled that in a sandwich with Provolone cheese. Wow!
