South of the Border Burgers
Tips
- A sharp Cheddar cheese would be best on this burger, but use Monterey Jack or Colby if you like.
- Try to prepare Giddyup Guacamole within an hour or so of serving the burgers. There are lots of myths out there about preventing mashed avocados from turning black, but I haven’t found a foolproof way yet.
- Black beans or refried beans would be good with this burger, along with sweet potato fries. You can even buy the fries frozen. Just heat according to the directions on the package. I like them with a little squeeze of fresh lime juice.
- While we’re on the subject of sweet potato fries, they are excellent with that squirt of lime juice and then sprinkled with Simply Southwest™ Seasoning & Rub. Dip them in sour cream or Hoppin’ Jalapeño & Bacon™ Dip. Wowser!

Always a fan of guac on my burger!!!
I’ve found that squeezing 1/2 – 1 lime over the avocados before stirring in the GG helps it retain it’s green color (and gives it a little extra zing)
