Early Christmas morning, we’ll be lured out of bed with the promise of Santa’s loot and the aroma of egg bake wafting from the slow cooker. With fuzzy jammies, bed head, love, laughter and a good measure of gratitude … we will celebrate. I wish the very same for you and yours – big hugs to you this Christmas.

January is the month for New Year’s resolutions … and for some of us, that involves food (or the lack thereof). Sigh. Must we live a life of denial and self-deprivation? It turns out NO! Our fabulous test kitchen has cranked out an amazing array of “Delicious Done Light” recipes … yay!
I’ve learned that like life, cooking is all about adapting. Theodore Roosevelt perhaps said it best – “Do what you can, with what you have, where you are.” I found Beth Wiggans’ recipe for Tomato Pesto Tart on our website, because I had some leftover pesto, a sheet of puff pastry and a hungry family. The resulting Pesto Pizza was so easy, so tasty and fun to make!
I love meals that come together quickly. So loaded potatoes are a go-to. No fancy ingredients, no planning ahead, no huge pile of dishes after. Use a big enough potato and it’s a meal; use a smaller potato and it’s a perfect side dish!
Sadly, summer is coming to an end (who let that happen?). Which means it’s time to fill up on garden produce before all veggies come from a can or a freezer (at least that’s what happens here in Minnesota). And since I like to have a little extra flavor and crunch with my salad, I especially like this grilled chicken salad – it’s perfect for the whole family, and it celebrates summer!
Summer picnics and potlucks almost always feature pasta salad. However, there’s one problem with most pasta salads at a picnic – they’re made with mayo. Which requires refrigeration. Enter Simple Pasta Salad.
I am a person who loves tomatoes. LOVES tomatoes. Unfortunately, I am married to a person who hates tomatoes and I understand that mine is not the only house divided over tomatoes. But you know what everyone loves? BACON! So, as a compromise, I serve Bacon Bacon BLTs.
