One of my dinner criteria is that it should make good leftovers – suitable for lunch the next day, or maybe even dinner later in the week. That means it has to hold up in the fridge for a few days, it can’t take a lot of time or effort to reheat, and I have to want to eat it again. I discovered bean salads a few years ago, and they’re perfect for packing.

Lighten Up!
January is the month for New Year’s resolutions … and for some of us, that involves food (or the lack thereof). Sigh. Must we live a life of denial and self-deprivation? It turns out NO! Our fabulous test kitchen has cranked out an amazing array of “Delicious Done Light” recipes … yay!
Pesto Pizza
I’ve learned that like life, cooking is all about adapting. Theodore Roosevelt perhaps said it best – “Do what you can, with what you have, where you are.” I found Beth Wiggans’ recipe for Tomato Pesto Tart on our website, because I had some leftover pesto, a sheet of puff pastry and a hungry family. The resulting Pesto Pizza was so easy, so tasty and fun to make!
Bacon Bacon BLT
I am a person who loves tomatoes. LOVES tomatoes. Unfortunately, I am married to a person who hates tomatoes and I understand that mine is not the only house divided over tomatoes. But you know what everyone loves? BACON! So, as a compromise, I serve Bacon Bacon BLTs.
Grilled Veggie Pizza
I’ve enjoyed a garden ever since I was a young girl. This season, my husband and I planted all too many summer squash plants…in which we are now wading. Hence today’s Grilled Veggie Pizza…it’s that time of year, and it’s an easy and amazing way to use up your bountiful harvest…enjoy!!
