Press pie crust into the bottom and up the sides of a 9-inch tart pan with removable bottom or a 9-inch spring form pan. Bake as directed on package for single pie crust. Cool completely. Combine Sweet Strawberry Cheese Ball Mix Packet 1 and cream cheese; stir to blend. Spread cream cheese mixture over cooled crust; artfully arrange sliced strawberries and kiwi fruits over the top. Combine Rhubarb Strawberry Fruit Spread and lime juice or amaretto. Brush fruit spread mixture over strawberries. Chill until served. Makes 8-10 servings.

Tips:

  • Use a baked and cooled graham cracker crust in place of the refrigerated pie crust.
  • During hot weather, freeze the pie and filling before adding the strawberries. Add the fruit topping just before serving.
  • Other berries may be used in place of the strawberries, such as raspberries or blueberries or a combination.

I made this recipe for dinner guests. While it was delicious (the glazed fruit and crust stole the show), I did make an assessment that instead of 12 oz of cream cheese, substitute it for 8 oz. of whipped cream cheese to make it ‘not so cheesy’.
