The lull between Thanksgiving and Christmas is a hard one. It’s usually one month where I just don’t have the energy or the ambition to venture out into the cold to do anything, especially entertain. However, I promised myself that this year will be different! There is no reason I can’t have a few friends over and do some entertaining while enjoying good company.

What better way to do just this than with a warm dip? This dip is really the best of both worlds — it’s perfect for cold weather entertaining and will keep you a little warmer! Try the variations below – you could end up having tasty hot artichoke dip as your meal!

Olive & Artichoke Warm Dip

  • 2 packets Olive & Herb Cheese Ball Mix
  • 8 oz. softened cream cheese
  • 8 oz. shredded mozzarella cheese, divided
  • 14 oz. can artichoke hearts, drained and chopped
  • 4 oz. can sliced black olives, drained
  • ¼ cup shredded Parmesan cheese
  • Crusty bread or pita chips

Combine first 2 ingredients; stir to blend. Add 1 cup (4 oz.) mozzarella cheese, artichokes and olives. Press mixture into an oven-safe dish; sprinkle with remaining mozzarella cheese and Parmesan cheese. Bake at 350 degrees for 15-20 minutes or until cheese is melted and dip is bubbly. Serve warm with crusty bread or pita chips. Makes 8-10 servings.

Tips:

  • Use 14 oz. of drained, marinated artichoke hearts in place of the unseasoned artichoke hearts. You can find them with a regular Italian or hot Italian marinade.
  • Green olives or Kalamata olives may be used in place of the black olives.
  • A little sprinkle of crumbled feta cheese would be good in addition to the Parmesan cheese on the top.
  • Spread the prepared (unbaked) dip on a pizza crust; bake as directed on the pizza packaging. Top with the remaining mozzarella and Parmesan cheeses. Sprinkle chopped fresh tomatoes or sundried tomatoes on the top before baking.
  • Spread a ½-inch layer of pizza sauce on the bottom of the baking dish before adding remaining ingredients; top dip with chopped pepperoni.
