I’d like you all to meet Joy Rodas – she’s a team member here at Tastefully Simple on our Product Development Team. She works tirelessly to ensure our ingredient lists and nutritional info are up to snuff with our standards and meet FDA regulations. She is also an amazing baker with a history in the restaurant biz. We are so lucky to have Joy on our team!
Our recipe today is by Joy, for joy, and made with a joyous product called Cinnamon Muffin Melt Mix! It’s called Sour Cream Coffee Cake – and it’s got me singing “Joy to the World” (the Three Dog Night version … not the Christmas carol … but you may sing whichever you choose!).
I love to cook, but baking is another story for me. Let’s just say it’s not my strength … we don’t have to go into the lumpy, half-baked details, right? Joy’s coffee cake is so simple to mix up, and it makes me look like a far better baker than I really am. I love that!

Sour Cream Coffee Cake
- Yield: 10-12 Servings
- Cook: 30-40 mins
A simple, recipe to please crowds.
Ingredients
- 1 Cinnamon Muffin Melt Mix™
- 1/2 cup water
- 1 cup sour cream
- 2 eggs
- 1/4 cup butter melted
Instructions
- Combine muffin mix packet with water, sour cream and eggs. Spread half of batter in greased 9-inch springform pan. Mix cinnamon packet with melted butter (mixture will be thick). Sprinkle half of cinnamon mixture over the batter. Spread with remaining batter; top with remaining cinnamon mixture. Bake at 350° for 30-40 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Makes 10-12 servings.
!Tips & Hints
•I used a 9-inch round cake pan, since I didn't have a springform, and it worked very well.
•This was remarkably simple to make, and I had a lot of requests for the recipe from those who tasted it (always a good sign!).
•I wouldn't change a thing – the recipe turned out perfectly (and the house smelled incredible!).

I’m wondering if yogurt would work just as well in place of the sour cream??? Has anyone tried it with yogurt?
Dawn – I haven’t tried it with yogurt, but I have used yogurt successfully as a sub in other recipes, so I’m betting it would work just fine.
Can’t wait to try this!! And I **just** picked up a spring form pan – what a great way to break it in! –> Dawn, I would try Greek Yogurt since it has the same kind of sour flavor as sour cream and it’s just as thick in its consistency.
This is one of our family favorites…my children request it for their breakfast on their birthdays and we always make it Christmas morning. It has now been a lifesaver for when we have weekend sleepover company…everyone loves this recipe!
I LOVE to bake! I’m taking my Cinnamon Muffin Melt box of the shelf and putting it on the counter until this is made and in my tummy. Sounds delish!

I’ve made this several times & it’s been a HUGE hit everywhere I’ve taken it! Definately one of my favorites!!!
