I love summer! I enjoy being able to spend time with family and friends by the lake. I relish the sunny days that seem to bring an extra spring to my step. I savor all of the fresh food … right from the garden is the best. And I secretly love that I use fewer dishes in the summer because we are constantly grilling! One of my staples this summer has been the Honey BBQ Seasoning & Rub. My family loves this stuff! And one of our favorite ways to use it is with our foil packet potatoes on the grill. We make these potatoes at least once a week and never tire of them. Seriously! They are the perfect accompaniment to any grilled meat. Throw in a few veggies too and your meal is complete.  So go ahead, get your grill on!

Honey BBQ Potatoes

  • 3 red potatoes (though any kind can be used)
  • 2 Tbsp. Honey BBQ Seasoning & Rub
  • 1 cup smoked gouda cheese cut into small cubes

Grease the aluminum foil with the non-stick cooking spray to prevent potatoes from sticking. Slice up the potatoes into small pieces (the smaller they are the quicker they cook).  Cut the smoked gouda cheese into small cubes.  Place a thin layer of potatoes on the greased foil, sprinkle a light coating of the Honey BBQ Seasoning & Rub on top as well as a portion of the cheese cubes. Repeat.  Seal up the foil packet and cook on the grill for 20-25 minutes or until potatoes are fork tender. Serves 3-4 depending on the size of your potatoes.

Tips:

  • The cheesier, the better!
  • This recipe is so flexible. Add more or less Honey BBQ Seasoning & Rub or cheese to obtain your desired flavor. I bet this recipe would even be good with some chopped onion thrown in the grill packet.
  • For a nice visual effect, top with some fresh parsley or chives.
