My personal definition of a successful meal is when someone asks me to make it again. And while my little one is too young for solid foods or asking for more, I have a friend whose children ask for this chicken all the time. I know she (and probably most of us) struggle finding meals that the kids and adults both like that are healthy and easy to make. So here’s a suggestion for, say, a Tuesday night – Honey BBQ Chicken, corn on the cob and sliced tomatoes. Maybe add some rolls in case anyone wants to make a chicken and tomato sandwich. Trust me (or at least trust my friend Brenda’s kids) – everyone will be happy.
Honey BBQ Chicken

- 4 boneless, skinless chicken breasts
- 2-3 tsp. olive oil
- 3-4 Tbsp. Honey BBQ Seasoning & Rub
Drizzle chicken breasts with olive oil and sprinkle liberally with Honey BBQ Seasoning & Rub. Let sit 10 minutes. Grill or pan fry until chicken is no longer pink in the middle, 5-6 minutes on each side depending on the thickness of the breasts. Makes 4 servings.
Tips:
- Use Roasted Garlic Infused Oil in place of olive oil.
- Boneless, skinless thighs are becoming readily available and would be a good alternative to the breasts in this recipe.
- Honey Apple Grill Sauce is delicious drizzled over the chicken during the last few minutes of cooking.
- Serve with fresh sliced tomatoes and corn on the cob sprinkled with Seasoned Salt.
