What’s better than breakfast for dinner? Nothing I can think of!

It’s fast. It’s easy. You can even hit all the food groups (now that’s a nutritious meal!). But best of all, it’s delicious!

The other night as I was thinking about a delectable breakfast meal to make, I thought I could wake up our tastebuds a bit by making savory muffins to go along with our eggs. So Hoppin’ Jalapeno Cornbread Muffins were born.

They were SOOOOO good. My daughter, who doesn’t always like spicy things, ate three of them and told me she wanted me to make them again. (Yay… a hit!)

Ingredients:

  • 1½ cups cornbread muffin mix (I had a box of Jiffy cornbread muffin mix at home)
  • 1 egg
  • 1/3 cup milk
  • 1 packet Hoppin’ Jalapeno & Bacon Dip Mix
  • 2 strips cooked, diced bacon
  • ½ cup shredded Cheddar cheese

Directions:

Gently combine all items and pour into greased muffin tins (I got 9 muffins from the mix). Bake at 400 degrees for 15 minutes.

Serve with butter or sour cream.

Variations:

  • Add a packet of Hoppin’ Jalapeno & Bacon Dip Mix to your eggs for even more flavor.
  • You could add almost anything to these muffins: more bacon, pepper jack cheese, diced jalapenos (fresh or from the can), corn, bell peppers, tomatoes … whatever you can think it!
  • You could easily make this recipe into bread or even waffles!
  • Serve with chili for a savory supper.
  • These muffins would also be great served with a grilled chicken breast topped with Awesome American BBQ Sauce or Olé Olé Fiesta Sauce.

My mouth is watering again for more of these scrumptious, savory creations … I better order some more Hoppin’ Jalapeno & Bacon Dip Mix!
