At our house we are deep into the frenzy and excitement of back to school. School supplies? Check! New tennis shoes? Check! Supplies all labeled and packed snugly into the new backpack? Check! Now all we have to do is await the first day. I’m not sure who is more excited, my daughter or me.

While we were dreaming about all the adventures in the upcoming year, my daughter and I thought we’d make a snack. And since my niece was with us, I thought we could all have some fun creating and cooking together. So thanks to Lead Team Mentor Kristy VanWyhe’s recipe, we landed on the perfect treat. Oh my stars, did we have fun! Not only was it the perfect treat, we also thought it would be a super-simple, tasty and fun after-school snack.

Based on a recipe from a popular weight-loss company, this delicious dessert can be made in under 2 minutes! This is a great low-fat dessert that tastes fabulous! My daughter loves to cook, so I know that this recipe will become a favorite treat at our house this year.

Classy Chocolate Coffee Mug Cake

Ingredients:

  • One package angel food cake mix
  • One box Classy Chocolate Pound Cake Mix or Absolutely Almond Pound Cake Mix
    • Empty pound cake mix into a big plastic storage container.
    • Add angel food cake mix and mix well. (Store at room temperature to use as needed.)
    • Spray a coffee mug with non-stick spray. Add 1/3 cup of the blended cake mix and 3 tablespoons of water. Stir thoroughly.
    • Microwave (yes … microwave) for 60 seconds.
    • Carefully remove to a plate and enjoy.
    • We had so much fun making individual treats for each person in our family! And the best part was that we were all able to have something different. My personal favorite was the chocolate cake with raspberries and chocolate chips added to the mix before microwaving. Yummy!
    • Be creative with toppings! Yogurt would be an amazing and healthy topping … or spoon some Creamy Caramel Sauce over the top. Mint chips, chocolate chips, a scoop of peanut butter or chocolate-coated candy pieces would also be tasty additions to the cake before microwaving.
    • Any of the Tastefully Simple cake mixes could be used in this recipe, including Truffle Fudge Brownie Mix.

        I’m going to make these up in baggies (or something pretty!) for an upcoming bake sale. I was having trouble deciding which Pound cake to use now I see Nana’ Apple too….

        OMS (oh my stars!) This is the ULTIMATE in easy and fun! I love the photos of the cherubs making their own cakes! LOVE, LOVE, LOVE! I’m gonna get the angel food cake mix this weekend! What a fun and special treat to have after school!

        I just made these with my 5.5 and 2.5 yr old children. We put the cups in the microwave and raced to clean up the toys so they could enjoy desert! Yummy.

          I don’t see where it says to add butter for these coffee cup cakes, unless you are talking about replacing the butter in the regular recipe…beer in the cake mix???

        I’ve tried these twice, and there is liquid in them when cooking for 60 seconds. Is this normal? I added frozen berries and wonder if that’s the problem…Thanks!

        And they are wounderful!

          The berries that I added were fresh, so your frozen berries could be the culprit of the liquid as you mentioned. I’ve also found that the mug size impacts cook time somewhat, bigger mugs may take a few extra seconds.

          I don’t know how WW points are calculated, but I figured out the stats on these, made with the Classy Chocolate Pound Cake mix and Betty Crocker Angel Food Cake mix. 16 servings, each has approximately 1
