The food at Party Palooza (Tastefully Simple’s National Conference) was especially good this year – the chefs at the Minneapolis Convention Center created some fabulous recipes for us, and they are truly a joy to work with. Sadly, summer is coming to an end (who let that happen?). Which means it’s time to fill up on garden produce before all veggies come from a can or a freezer (at least that’s what happens here in Minnesota). I am a mom on the run, literally, you know the feeling…you feel like you live out of your car. There are certain evenings when I really have to make sure that I am prepared for a quick and easy meal and Grilled Chicken Spinach Salad definitely fits the bill.
Salad, salad, salad, all summer long I hear…let’s pair that with a salad. My family got real tired of me chopping up lettuce, putting it in a bowl and calling it a salad, so it was time for me to try something new.
