I am a person who loves tomatoes. LOVES tomatoes. Unfortunately, I am married to a person who hates tomatoes. I’m not sure what makes the red orbs of deliciousness so polarizing, but I understand that mine is not the only house divided over tomatoes.

But you know what everyone loves? BACON! So, as a compromise, I serve Bacon Bacon BLTs. They have twice the bacon flavor for people who wish they were eating a bacon sandwich. And I can add an extra slice of tomato (or two, or four extra slices) to my sandwich to maximize the tomato-y goodness of summer. And, since everyone is individualizing their sandwich, just slice the bread and tomato, cook the bacon, make the Bacon Bacon Dip and set it all on the table – perfect for busy summer nights, and you can even serve sandwiches on paper plates with a side of chips (with the already-made Bacon Bacon Dip) for easy clean-up!

Combine first 3 ingredients; chill 2 hours. Spread 2 slices of Bountiful Beer Bread (toasted if desired) with Bacon Bacon mixture; top with tomatoes, bacon and lettuce to make a sandwich. Repeat with remaining slices of bread and toppings. Makes 4 sandwiches.

Tips:

  • This sandwich is delicious with sliced avocados on it too.
  • Low-fat or fat-free mayonnaise and sour cream can be used in this recipe.
  • It’s easier and tidier to cook bacon in the microwave. Just place the slices in a single layer on a paper towel-lined microwave safe plate; top with another layer of paper towels. Check bacon after 3 or 4 minutes, but it should take 1 minute per slice of bacon, or about 8 minutes on high to get nice, crispy bacon…without splattering your stove.
  • For sturdier sandwich beer bread, just add two beaten eggs to the Bountiful Beer Bread batter along with the beer.

    I’ve always talked about making vegetarian BLTs with the Bacon Bacon dip at my parties … but man is is a better visual than I imagined! A jacked up BLT!!! Mmmmm!
