I am not a frequent cooker of shrimp. Or seafood. Or fish, even. I grew up land-locked with nary a fishing pole in sight. My family dined on hamburger, the occasional pork chop and canned soup (and not that expensive chunky kind). So when I stumbled upon a recipe for Shrimp Tacos while searching for a recipe for our Cinco De Mayo celebration, I thought “Hmmmm … should I? Could I?”
Easy-to-Eat Taco Burgers
I love tacos. But I don’t love cleaning up, and unfortunately I have some messy eaters at my house (true confessions: I am one of said messy eaters). Bam – grill the meat in patties, use slices of cheese and tomatoes instead of shreds, and wrap it all up in a tortilla. Even my family should be able to eat these tacos with just one napkin apiece (that’s a rarity for us).

Spring has sprung! I know it’s true, because our supermarkets are loaded with asparagus and it’s finally at a reasonable price! Giddyup Veggie Salad
Every spring I get so excited to plant my garden. My mouth waters when I think about all the delicious creations that will happen in our kitchen. My whole family gets giddy when we go to the local garden center to select seeds and starter plants. We arrive home and enjoy analyzing what will be the best layout for our harvest this year. Then we happily dig into the dirt, carefully preparing pockets for each seeds. We water … we wait … we talk about what we’ll make.
Like many women, I work full time. Which means dinner is something from the freezer more often than I care to admit.
