I am not a frequent cooker of shrimp. Or seafood. Or fish, even. I grew up land-locked with nary a fishing pole in sight. My family dined on hamburger, the occasional pork chop and canned soup (and not that expensive chunky kind). So when I stumbled upon a recipe for Shrimp Tacos while searching for a recipe for our Cinco De Mayo celebration, I thought “Hmmmm … should I? Could I?”

Easy-to-Eat Taco Burgers
I love tacos. But I don’t love cleaning up, and unfortunately I have some messy eaters at my house (true confessions: I am one of said messy eaters). Bam – grill the meat in patties, use slices of cheese and tomatoes instead of shreds, and wrap it all up in a tortilla. Ham Asperagus Rolls and Caprese Salad
Spring has sprung! I know it’s true, because our supermarkets are loaded with asparagus and it’s finally at a reasonable price! My mom has been an avid hunter of wild asparagus for years – I think she was taught by her father, who always referred to the elusive stalks as “asper-grass.” I wouldn’t go near the stuff until I was well into my 30s … and I don’t really know why. And I’m also expecting a baby – which, I’m told, means things are about to get more hectic. So I’m stocking the freezer now – but not with bland frozen lasagnas and cardboard pizzas. I decided to make some of the Tastefully Simple Tonight meals and freeze them. Read More»

Potato Packets & Marinated Veggies
Let’s focus on the wonderfulness that comes only with an early spring. I haven’t had to cover my face to go outside in months! And even better … the grill came out way early! Read More»
Lemonade Cheese Ball
Remember lemonade stands? I know I dragged the card table to the corner several times a summer to make some extra cash (I no longer remember what I did with my riches). And there’s something about lemonade that just makes summer feel relaxed and free. Read More»
