While Peter Cottontail is hopping down the bunny trail, my family and I had an early Easter dinner on Sunday! We kept it very simple and easy, plus we moderated ourselves by keeping the number of different dishes to a minimum, since we all have some fitness goals in progress. Since we were not eating our meal until evening, I didn’t even begin to prepare anything until about 3:00 pm that day and we had dinner on the table by about 6:30 pm. The actual prep time (not including baking time) was about 30 minutes or so. Read More»

Asian Shrimp Salad
Summer’s coming … which is good news, except for one thing. Now that I’m not layering a tank plus a tee plus a sweater, it’s pretty obvious that I’ve added a little, um, insulation over the winter. So it’s time to build my menu around produce and lean protein. Read More»
Citrus Chicken
The Scout Motto is: BE PREPARED – which means your mind and body are always ready to do your DUTY. I love it when I am prepared, which makes it difficult to understand why I almost never am. It is my duty to cook both at home* and for work, and yet I often find myself serving dinner to my long-suffering family at 8:45 pm or making blog recipes at 1:45 am. I have even been known to drag a family member out of a deep slumber in the wee hours of the morning, fork in hand, whispering, “Honey, wake up … I need you to taste this.” Read More»
Bayou Bourbon Salmon
‘Tis the season for fish. And cheap fish sandwiches are certainly available in abundance. And as cheap as they are, is it really worth it? Fish is so easy to make at home. Shepherds Pie
Last year I made a corned beef and cabbage stir-fry (yummy and much easier than the traditional meal) – this year, I decided on Shepherds Pie. Then I started to do some research, and I was soon asking more questions than a 3-year-old. There doesn’t seem to be a single source of truth about Shepherds Pie. It could be lots of things. Shamrock Beer Bread
When I was a little girl, we got our first artificial Christmas tree. When my grandma came over to admire it, she politely asked my mom if that’s how we intended the tree to look. Then she proceeded to fluff the tree and move the branches around … and somehow, the already-decorated tree really did look better when she was done. Read More»
Smoked Cheddar Pasta Salad
I also had a blast from the past at our Tastefully Simple On Tour conferences in February. We were treated to what I would call Macaroni Salad, but what the modern world would call Pasta Salad. It was traditional in the sense that it had noodles, peas, onion and Cheddar cheese, and it was jazzed up with our new Smoky Cheddar Cheese Ball Mix. Read More»
Almond Cream Cake
Even a dinner party with three couples usually means cake. With frosting. That’s just the way it is, and in my opinion there’s nothing wrong with that. Read More»
Easy Caramel Corn
Caramel tastes good on almost everything! I make caramel corn often and usually make my own caramel sauce, but the other day I was asked if I used Creamy Caramel Sauce to make my caramel corn, and my mental light bulb went off. Read More»
